James Strawbridge has been meeting some smallholders who push the boundaries with adventurous food projects. Here is one of them…Perhaps the most exciting part of my South West tour was rounding up some cattle with Bridgette Clamp. Bridgette and her husband Steve run Higher Trenowin Farm near Penzance. The high rocky ground makes a tractor or quad bike difficult to use and the way to herd up her livestock is on horseback. It is lower impact and sustainable and helping her out was a dream come true. This experience also inspired us to cook up some steaks with barbecue beans and rosemary potato skewers. Bridgette also told me about Ladies in Beef. Co-founded by Minette Batters and Jilly Greed, this is a group of female beef farmers who care passionately about British beef. They promote and drive awareness of the quality and versatility of British beef by using a country-wide network of dynamic lady beef ‘champions’. All the ladies are British beef farmers and proud of it! The organisation was launched by Her Royal Highness, The Princess Royal, Master of the Worshipful Company of Butchers. Bridgette is one very cool cowgirl and, if you have your own cattle, then look to Ladies in Beef for some inspiration! Recipe SOUTH WEST T-BONE RUB (serves 4) Here’s a delicious and slightly different spice rub to brush over steaks before laying on the barbecue or searing in a griddle: Ingredients: • 1 tbsp ground coffee • 1 tsp cayenne pepper • 1 tsp sea salt • 1 tsp cracked black pepper • 4 tbsp olive oil
